Around these parts, Mr. C is quite notorious for his fabulous Sunday breakfasts. Yesterday, with wonderful bacon at hand, a couple gorgeous tomatoes and fresh market eggs he was taking requests from the kitchen.
So I begged for one of my favorite, albeit rarely eaten treats: A simple bacon, egg and tomato--on slightly toasted buttermilk bread-- sandwich.
If I tell you this was one of the best sandwiches I've ever had it will still be an understatement. It was just heavenly. The bacon was cooked to perfection and it had the most beautiful rosy hue.
The tomatoes heated through just enough and the egg, oh the egg! Cooked well with an intensely yellow and very runny yolk that painted the insides of the sandwich with a sunny, happy and flavorful disposition.
Funny thing is how while eating this beauty, uttering too many mmmms and watching Mr. C's big grin--a job well done indeed-- I kept thinking how great of an entry this would have been for Jeanne's EoMEoTE #4. ;-)
