Fran's Chocolates Dark Gray Salt Caramels
One of the joys of living in this city is the abundance of great food and drink around us. And if you happen to have a sweet tooth and are also a chocoholic and you living in Seattle you know you really are in luck.
One of my favorite caramel confections in the world, luckily, also happens to be made in our fair city by one of the nation's top chocolatiers, Fran Bigelow.
Her Dark Gray Salt Caramels Dark Gray Salt Caramels are to die for!
The company's website describes them as follows: "Soft, fresh caramels hand-dipped in 56% pure dark chocolate and sprinkled with flavorful gray sea salt harvested off the Brittany coast".
They also happen to be the winner of the 2003 NASFT Outstanding Confection. Need I say more?
And just so you have an idea of how passionate I am about these babies and to continue with Debbie's Caramel theme for the week (yeah, that's the ticket!) we are going out to dinner with out of town friends at a lovely restaurant with one of the best views in the city.
We purchased enough of these for our party and will take them out of their lovely wrapper in time to enjoy them with our coffee or dessert wine. What better sweet ending that these Seattle caramels to what promises to be a fabulous time with good friends and great food?















Are you kidding? The salt way overpowers any of the other flavors, and leaves a terrible aftertaste in the mouth.
I am a big fan of salty and sweet. Raisonettes and popcorn are the best. Gorp with lots of peanuts and M&Ms disappear around me. I like to dip my cake in gravy if the icing is too sweet. I am the queen of salty and sweet, and I cannot abide the Sea Salt Caramels. What a dispoointment.
And now I can't get to her website to let lety her know.

Oh i agree! my mother trained me to reguard frans as the best. we always go shopping in u-village and get a treat at the shop. i recently tried the hot chocolate which was great but i was not brave enough to try it with the whole milk. my young american girl instinct kicked in which doesn't allow anyinth other than non-fat most of the time. i settled with 2% which was just fine and still quite rich. i'm glad others know the joy of frans as well! *-*

I stumbled on this post while craving chocolate madly...and promptly clicked over and ordered these chocolate caramels with the sea salt. They look amazing, and I've been dying to try the sea salt/chocolate combo.

I agree with you on Fran's sea salt caramels! I got a box of them for my birthday last year, and part of the gift was not having to share. There's something just so fabulous about the mix of sweet, salt, and caramelized... Perfection. I went to hear Fran talk about the process of developing flavor combinations last year, and it was fascinating. She is a remarkable flavor magician!
